Chef Patrick Stark, Founder

You have probably seen him on Food Network’s Cutthroat Kitchen (twice), ABC’s The Taste Season 2, or Food Network’s Rewrapped and Mystery Diners as well as other productions.

Patrick Stark is a graduate of the prestigious Culinary Institute of America (C.I.A.) and is an avid musician who decided to combine his passions for music and food. He became the executive chef for the well-known Granada Theatre in Dallas, Texas. His success prompted Granada’s business owner, Mike Schoder & Julia Garton, to open a new location adjacent to the theatre. “Sundown and the Granada” became Patrick’s venue to pursue his desire. Local ingredients, organic, grass fed, free range, vegan, and gluten free are standard to the Chef’s menu.

After his 8 year stint, Chef Patrick now runs his own company “Food Dudes LLC“, which encompasses all his companies including “Sgt. Snack”, and most importantly The Mohawk Militia.

The Mohawk Militia Story

Patrick grew up in a household with family in the military, which is why he has a passion for helping veterans. “I have seen many of the ailments and issues our troops deal with upon acclimating back into society, specifically the veterans who worked in kitchens with me. As a result, I realized that much of today’s society does not know what it takes to serve and protect our country or be gracious to the individuals that have done so. I wanted to help our Veterans and believed that change occurs when one has a healthy mind, body, and soul. This process all starts with healthy food and fuel. Thus, being a chef, I decided to start this charity to help veterans as well as create awareness about what’s going on regarding the food standards in our country and the power of clean food.” The Mohawk Militia teams up with other local organizations educate, raise funds, and host events that continue to help and assist our veterans in need.

Erin James, Director

Erin James is a Real Estate Professional that has served the DFW metroplex for over 17 years.  She has been involved in Veteran and homeless charities for the last 10 years.  Her passion for charity comes from her parents teaching her to share her blessings.  She feels that at the end of the day, all we have is how we treat one another. 

Pam Abel, Treasurer

Pam is an experienced Vice President at AT&T with professional leadership skills spanning multiple disciplines including Sales Operations, Customer Relationship Management, Technical Global Work Centers, Process and Cost Reduction Re-engineering, Finance, Strategy and Negotiations. She is experienced in leading large, complex global teams and programs such as customer turn-around efforts, global outsourcing contract negotiations and other significant global programs. Pam is a strong business development professional with an MBA focused in Finance from Columbia University and we are thrilled to have her on the team.

Leslie Austin, Social Media

Leslie Austin is a soulful, dynamic recording artist & songwriter who has opened for artists such as Neil McCoy and Jerry Jeff Walker. She’s also an agency-represented model who’s been published in international campaigns. In addition, Austin has an extensive background in health & fitness and has always been passionate about helping people move towards healthier lifestyles physically, mentally, & spiritually. Austin’s faith drives her to be a light in the world & to use her talents for opportunities to positively impact people. “I joined The Mohawk Militia team because I’ve always been passionate about both serving those less fortunate & helping educate & empower people to live healthier lifestyles. The Mohawk Militia’s mission encompasses both, so it’s a perfect fit!”

Erin Ramsey Petty, Marketing

Erin Ramsey Petty is a realtor serving Dallas residents, often alongside Erin James. She is passionate about helping the homeless, and donates 10% of her income to charities that support the homeless community.  She got involved with the Mohawk Militia because of the high percentage of veterans within the homeless population and her desire to help them get back on their feet. Her extensive background in sales and marketing makes her an ideal fit to lead the Mohawk Militia marketing efforts. She is thrilled to be involved in a charity that incorporates her personal values and dedication to helping others in need.

Chef Joey Allette, Veteran Liaison

Joey is currently the Executive Chef and Event Producer at the premier culinary team building venue in DFW, Team Building with Taste, as well a chef to many famous musical acts and celebrities. He is a demo Chef for Oil & Vinegar, Le Creuset, Avacado’s From Mexico, caterer, TV personality and culinary instructor. Joey has also been featured on the Food Network and is routinely featured on many major network news cooking segments demonstrating his unique fusion of food & big personality. Before he was professionally trained in the culinary arts, he served in United States Air Force, making him a perfect veteran liaison and a wonderful addition to our team. Hooah!
